Rolling Scones

Hey all!

I'm so awful! I said I would post this recipe last week and I just never got to it. So I've finally found some time and I am going to post it now! :D

The thing is, I've been overloaded with work, getting ready for going off to University and helping my cousins move to North Carolina! So I just haven't had the time to post.


This is going to be quick and to the point, and I hope you don't mind.

I'm squeezing this post in before I head off to Spinning Class...Which I recommend you all try at least once! I love it! :D 

Maybe I'll do a post on it one day if you'd like?? :)

Anywayss...I made this recipe about 2 weeks ago and it was delicious AND healthy.

It is not my own recipe, but it is from the recipe book called "The Looneyspoons Collection" by Janet & Greta Podleski. I did however make a few substitutions to make it extra healthy (even though the recipe alone has pretty healthy ingredients.

You can check out their website here! They have a few recipes on their site, but I DO recommend buying this cookbook. I've made a few things from it already and all were delicious!

The great thing about this book is that they give you the nutrition information (except for the "Splurge-Worthy Section). So you can alway ensure that you are getting the proper nutrition you need in your life :)

The Rolling Scones

Makes 12 Scones
125 calories, 3g total fat (1.5 g saturated fat), 3 g protein, 22 g carbohydrate, 1.2 g fibre, 24 mg cholesterol, 311 mg sodium

^^ I'd say that sounds pretty good to me :) Compared to the 300-400 calorie scones you may buy at a bakery.


1 1/2 cups all-purpopse flour ***
1/2 cup oat bran
1/2 cup sweetened dried cranberries, chopped***
1/3 cup packed brown sugar***
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup buttermilk
2 tbsp butter, melted
2 tsp grated orange zest***
1/2 tsp vanilla
1 egg***

***My Substitutions***
- Instead of 1 1/2 cups all-purose flour, I used 1 1/2 cups whole wheat flour
- Instead of 1/2 cup sweetened dried cranberries, I used 1/4 cup of dried cranberries and 1/4 cup pumpkin seeds. This gave the scones a nice nutty flavour to it
- Instead of 1/3 cup brown sugar, I used 1/4 cup brown sugar and 1 packet (1 g) of stevia.
- I did not have any oranges handy so instead of the 2 tsp grated orange zest I used 2 tsp grate lime zest. Plus...I love limes ;)
- I ALSO did not have any eggs BUT I did happen to have egg whites from those egg beater containers so instead of 1 egg I used 1/4 cup egg whites


Preheat oven to 400 F. Spray a large baking sheet with cooking spray and set aside

In a large bowl, combine flour, oat bran, cranberries, brown sugar, baking pwder, baking soda and salt. Set aside.

If you wanted to add anything else, like seeds, nuts, chocolate chips, etc..this is the time to do so.

In a medium bowl, whisk together buttermilk, butter, orange zest (or any other citrus zest ;) ),  and vanilla. Add wet ingredients to dry ingredients. Stir until a soft dough is formed.

 Add a bit more flour if dough is too sticky (I definitely had to do this).

Turn dough out onto a lightly floured surgace. Divide into 2 pieces.

Shape each piece into a ball. Place balls on baking sheet. Roll out or pat dough to 3/4-inch thick circles, about 6 inches in diameter. 

Using a sharp knife, cut each circle into 6 wedges, but do not separate them. (Here, I cut them into 8)

To make glaze, lightly beat egg and 1 tbsp water in a small bowl. Brush glaze lightly overtop of dough (you will use less than half of it).

Bake for 15-17 minted, until socnes are puffed up and golden.

Cool slightly. Pull scones apart and serve warm :)

They were OH SO GOOD!

School, Ducks, and DIY

So we're just about half way through August which means it is almost time to start thinking about what I need to pack for school!

This has been going through my mind like crazy! I will be a freshman in 3 weeks!

I haven't packed much yet, just a few things.

These would include things like notepaper, pencils, highlighters, alarm clock...

Not much at all :P 
Oh! I did however buy myself a keurig <3 I do not know if i'd be able to survive a year without one of those!

It's a scary thought though...University...but it is also a very exciting thought.

I'm excited to meet new people, to start my future, and to have new experiences. But I'm also scared of leaving home and getting into unhealthy habits.

BUT mostly I'm excited!

I found a "College Checklist" on Pinterest and it just put me in the mood to start packing my room together.

As I was packing my mom was calling me downstairs to come to our backyard.

I was thinking "What now!?" 

It turns out there was a duck in our pool! So of course I grabbed the bread and started feeding it!

It was like living by a pond or creek or something.

Isn't he/she just adorable! Quack Quack!

But enough about that.

The real reason for todays post is just a little DIY.

As I was going through my room looking for things to take to school I came across a plain wooden tray and thought I would take that to put magazines in or any other uses really.

So I decided to paint it to give it a little extra "oomph"

I'm really into the whole antique looking furniture, especially antique white wood.

So that is what I aimed for.

What You Need

  • Wooden Tray
  • White Spray Paint
  • Brown or Gold Metallic Spray Paint
  • A Clear Coat

So I began with a plain wooden tray that I had from an old gift basket :)

Using a white spray paint, spray the entire tray until you cannot see any of the wooden colour.

Once dried, use a metallic colour to paint the corners to give the tray a type of border.
And about 2 feet away, start spraying the tray (One pump at a time) sparsely to get that antique look.
For the back I just mixed the white with the metallic colour on a paper plate and painted with a paint brush.
Once all is dry, spray the entire tray with a clear coat to give it a glossy and clean finish!

Markets and Turnovers

I just love summer! 

There are so many fruits and vegetables that are fresh in season which make them that much more delicious!

It was 30' Celsius outside today which meant that it was not a good day to stay indoors.  

So my mom and I took a visit to one of my favourite farmer's market.

We bought lots of fresh fruits and vegetables like blueberries, peaches, green beans, zucchini, tomatoes and of fritters! :D

I also got a pair of Birkenstock shoes :)

This market is great! They pretty much have everything from fresh fruit and veg to fritters and cannoli. They also have textiles and so much more!

I was in heaven! 

Overall, it was a great day! And to finish off this great mood, I leave you with a recipe I created over the weekend! 


Strawberry & Peach Turnovers

Makes 6 Turnovers


1 Sheet of Puff Pastry (I used Presidents choice, also feel free to use two sheets to double to servings or serving size)
2 Ripe Peaches
2 Strawberries
2 Tbsp Sugar + *More for sprinkling at the end*
1 Tbsp Corn Starch


1. Take the Puff Pastry sheet out of box/container and let thaw on the counter for about an hour.

2. While letting the puff pastry thaw, begin creating the filling by slicing the peaches and strawberries into bite sized pieces.

3. In a small pot on medium heat, add the fruit and the sugar and gradually stir until the juices from the fruit start to form (about 5 min).
4. To thicken the mixture add 1 Tbsp of cornstarch and stir.

5. Take pot off the burner and pour into a glass bowl to place in the fridge to thicken up. It should thicken up by the time the puff pastry is thawed.

6. Preheat over to 350' F

7. Unroll your puff pastry sheet either on a lightly floured surface or on parchment or wax paper to prevent sticking.

8. Using a rolling pin that has been lightly floured, roll out the dough to make it a bit thinner. However this is not necessary and most puff pastry sheets are thin enough. (May omit this step)

9. Cut the sheet into 6 equal squares with a pizza cutter or knife. (mine were rectangles :P )

10. *Sprinkle about half a teaspoon of sugar onto the center of each square.*

11. Using 1 teaspoon to 1 tablespoon, scoop the fruit mixture into the center of each square. To avoid a messy disaster when folding these babies up, try to avoid transferring too much of the fruit juices to the centre of the pastry.

13. Wet the edges of each pastry with water for dough to stick.

14. Carefully lift one corner of the pasty to meet with the adjacent side and then fold over any excess pastry.

15. *Poke two holes with a knife on top and sprinkle with sugar*

16. On a greased baking pan carefully lay out the turnovers (6 small ones will fit on one pan) and place in the oven for 15-25 minutes depending on your oven.

17. Turnovers will be done when edges are golden brown and puffed up.


These are actually so delicious! Especially with the fresh fruit. You can always use canned pie filling to speed up the process but it never tastes as good as this!

This recipe is adapted from my job. I work in a bakery part time and I tend to pick up some skills ;)
This was a test run, but I can definitely say that they came out pretty well.

TIP: I will add however to NOT overfill your turnovers because you will not be able to fold them. I did add a bit too much in some but if you don't care about how they look then don't listen to this tip :P

You can try them out a few time since this recipe only makes 6 small turnovers.
Feel free to alter this recipe as you wish.

Clearly some come out better than others!

A Walk Along the Beach

I have some amazing news!

So my all time favourite show is Boy Meets World. Always has been and always will be!

I mean Corey and Topanga...How much cuter can it get!?!

Anyways, I am a follower of his on twitter, and like any fan I swoon over him!

Recently I tweeted him and he actually tweeted me back! I mean it may not seem like much, but I was 

head over heels when he responded back!

And yes...I was definitely the happiest girl on Earth!


So, today I had a nice beach picnic with a couple of friends.

We (and people in general) tend to go to the beach to relax from the day's stresses right?

Well, it was a bit more disturbing than usual.

First of all the day started off with bird plops on my Birkenstock sandals.

Not pretty...

But at least we were only seconds away from the water, which mean that those droppings were cleaned right off! 

NOW it was time to relax right?


As we walked along the beach we came across a dead carcass of a fish...

And only about 10 meters later we came across another...

Keep in mind that we had NOT eaten yet and our picnic was just miles away.

This just sort of killed the mood and our appetite to say the least, so we just continued to walk and thankfully the rest of the beach was just of sand, sand and sand. 


Our picnic was great, no pictures however...Sorry :(

We had some gluten free pasta with home made marinara sauce filled with veggies, along with water, 
potato salad, and fresh fruits and veggies!

Overall, the day was great! Full adventures and findings :P

You CAN Have Your Cake and Eat it Too!

I've always been a carb lover and dessert admirer! 

I mean, working part time in a farmer's market as a baker I never get enough!

I love to decorate and bake as much as I like the taste of a good chocolate cake. 

So whenever I get the chance to bake I take it! So if its your birthday you can bet your dollar's bottom that you will be receiving a cake from me...decorated or not :D

One of the best cakes I have ever made, tasted and received compliments from if a Chocolate Peanut Butter & Ganache Birthday Cake adapted from here.

This cake in particular I made for my best friend's birthday! And it was demolished within a day!


Cake Ingredients:
1 Box Devils Food Cake Mix
1 3.9 ounce box chocolate pudding
1 Cup Sour Cream
1 Cup Veg Oil
1/2 Cup Milk
1 tsp. Vanilla
4 Eggs
1 Bag Mini Chocolate Chips

1. Add ingredients into mixing bowl and beat until combined, about less than a minute.
2. Bake in prepared cake pans (I use 2 8' pans) in a pre heated 350 degree oven for about 15 minutes. 
3. Remove from oven and let cool.

Now that you have two equal sized cake rounds you can begin to fill the center to stick the two together.
I used peanut butter frosting and a layer of chocolate mousse.

 Peanut Butter Frosting
1 cup Butter(room temp)
1/2 cup Peanut butter
1 TB Vanilla
3-5 Tb Heavy Whipping Cream
4-5 cups Powdered sugar
1. Beat room temp butter and Peanut butter until Creamy. 
2. Add about 4 cups of powdered sugar, vanilla, and 3 TB whipping cream and beat until combined and creamy. 
3. Add more whipping cream and/or powdered sugar to reach desired consistency. 

PB Frosting :)

Chocolate Mousse (Dr. Oetker)

Once you stack your second layer you can go ahead and start decorating!

I started by covering the cake with the PB Frosting

Then I used a regular chocolate from here to decorate and personalize the cake to make it special! But of course you can do what you please. You don't even have to decorate it. Sometime I'll just make the cake and frosting and eat it like a fondue!

London 2012 Baby!

Who's ready for the Olympics of London 2012!!!???

I AM!! Go Team Canada! Woo!

Actually I just came back from Europe with my parents last Friday. We started in London, then headed to the countryside, took a Ferry to Amsterdam and then a train to Paris!

I am currently watching the opening ceremonies for the olympics now! So excited!
A friend of mine is actually competing in the Paralympics for swimming in London, and I am so happy for her.

Ready Set Go!

Hello there!….that is if there is anyone reading this.
I am so nervous. This is my first blog ever! I have been meaning to start a blog for so long now, and am an advocate admirer of many blogs myself.
So here’s a brief synopsis of myself..
I must say I can be quite the boring person. My name is Brittany and I will soon be attending University for biomed. How that goes…I do not know.
That’s it, boring right?
I'm sure there's more of myself to be discovered, but for now it's as simple as that.

I guess I should tell you the main reason why I wanted to create a blog. At first it just looked like something fun to do. I loved reading blogs about healthy eating, do it yourself, and just any blog about daily life. But when I went to create a blog…the truth is…I got scared. What would I write about? Who would read it? What would happen?
I’ve come to the point now, that this blog is really just for MYSELF. No one else. It is a place I am going to use to motivate myself for all the things i’ve been “meaning” to do but just havn’t got around to. So if no one ever reads this, it’s fine. Becuase the truth is, in the back of my mind, the whole world is reading it ;)
Now the question is: what is this blog going to be about??
That question has not been answered. For now, this blog is going to help me become a better person for others and myself. I am looking forward to becoming a healthier person inside and out. This blog will include my journey to healthy eating and physical activity. If you are an advocate for these two things, feel free to join me in my journey.
